Today, I’ve something very delicious for you! Well, since it’s my 101st post I thought I should share something yummy with you… something sweet? Mmmm, but then you might have already tried and tasted a popular sweet recipe of mine: My Mexican Chocolate-Filled Churros

So here’s something spicy for you….. my recipe for Spicy White Chicken Enchiladas!

Swarupa’s Spicy White Chicken Enchiladas

Like the presentation? It’s got the Christmas look… and the colours of the Mexican flag (the Italian too!) 🙂

It’s a very simple & easy recipe and there’s no way you can go wrong with it. Try it out! Here it is…

Swarupa’s Spicy White Chicken Enchiladas


50 gms cream cheese (or prepare it as below):

150 ml cheese

100 ml milk

Mix both together in a sauce pan and stir it till it thickens.

Chicken Filling:

3 tbsp oil

1 medium chopped white onion

1 tbsp garlic paste

3 finely chopped green chillies

1 de-seeded and chopped medium tomato

1/2 chopped capsicum

1 1/2 tbsp red chilli powder

150 gms cubed boneless chicken

Salt to taste

1 tbsp finely chopped coriander leaves

Heat oil in a pan and add the chopped onion. Saute. Add garlic paste and green chillies. Stir. Add tomato, capsicum and red chilli powder. Add the boneless chicken. Add salt to taste and stir well. Add finely chopped coriander leaves.

White cheese sauce: 

1 cup grated cheese

15 chopped dark green chillies

15 chopped fresh red chillies

2 tbsp milk + 1 1/2tbsp melted butter

1 cup cream

1/2 cup milk

1 finely chopped small white onion

1 tbsp finely chopped coriander leaves

Put all the ingredients in a double boiler and heat on medium fire. Cook until melted and well-blended, stirring occasionally.

6 Mexican tortillas or Indian chapattis (6 inch size)


Stir together the cream cheese and chicken mixture until blended.

Spread some of white cheese sauce onto the bottom of a dish.

Place a portion of the chicken filling inside each tortilla/chapatti and roll into firm cylinders.

Place the seam side on the bottom of the dish and cover with remaining white cheese sauce.

Microwave for four minutes and serve hot.
